Serves 8-10
Sorry my version doesn't have the marzipan carrots on it like the picture.
Ingredients
150g wholemeal self raising flour
125g fruit sugar
300g grated carrot
3 fl oz sunflower oil
Zest and juice of 1 orange
1 tbsp lemon juice
50g ground almonds
50g dessicated coconut
3 eggs
1 tsp ground cinnamon
Method
1. Preheat the oven to 190c/375f/gas mark 5
2. In a bowl or food processor mix together the oil and fruit sugar until pale and fluffy
3. Add egg yolks one at a time and mix in between. Add orange zest and juice, then mix again
4. Add baking powder and cinnamon.
5. In a large bowl whisk egg whites until stiff
6. Gently fold in cake mixture with the remaining ingredients
7. Spoon mixture in to a greased baking tin and level the surface
8. Bake for 25 – 30 minutes
For the topping
1 tub of Quark ( virtually fat free soft cheese)
1 tbsp fruit sugar or icing sugar
Rind of one lime
Juice of one lime
Handful of chopped walnuts
Method
Combine the Quark, sugar, lime rind and juice in a large bowl and spread evenly over the top of the cake. Place the chopped walnuts over the quark, chill and serve.
